More wine in barrel

We racked off the pinot gris today. It smelled and tasted wonderful. Very pleased with the flavors coming from this young block of fruit. It is back in stainless to settle again. We will probably rack off again sometime after the new year.

In the meantime the pinot noir is settling nicely in the barrel. The flavors have continued to be surprisingly deep and complex given the cool weather we had. These wines are developing quite nicely. We are also using some new barrel combinations that will bring some additional characteristics to the wine.

Making Pinot in Oregon Wine Country

Winter is here in Oregon Wine Country, but the wine is safe in the winery. The pinot noir is all in barrel now and beginning malo. Everything smells great. Now we are putting our attention back on the pinot gris. We will be racking it off tomorrow, stopping the fermentation at about .2 or .3 % residual sugar. The fruit flavors are very robust for this young lot of fruit from the Aspen block.

November is a great month for new releases of Oregon Pinot Noir. We are previewing the 2008s to our wine club this weekend. Celebrating with a dinner next Sat. night. Then releasing to the public Thanksgiving weekend.

Robert Parker has released ratings on the 2008 Oregon Pinot Noirs. The Dobbes Family Estate 2008 Youngberg Hill Vineyard Pinot Noir received 90 points.
