Making Pinot in Oregon Wine Country

Winter is here in Oregon Wine Country, but the wine is safe in the winery. The pinot noir is all in barrel now and beginning malo. Everything smells great. Now we are putting our attention back on the pinot gris. We will be racking it off tomorrow, stopping the fermentation at about .2 or .3 % residual sugar. The fruit flavors are very robust for this young lot of fruit from the Aspen block.
